Basil Grilled Chicken

3/4 tsp. pepper
4 boneless, skinless chicken breast halves
1/3 cup butter, melted
1/4 cup finely chopped basil
Fresh basil sprigs

Press 3/4 tsp. pepper into sides of chicken. Combine 1/3 cup melted butter and 1/4 cup finely chopped basil, stir well. Brush chicken lightly with mixture. Grill chicken over medium coals, 8 to 10 minutes per side, basting frequently with remaining melted butter mixture. Serve with basil-butter and garnish with basil sprigs. Serves 4.


1/2 cup butter, softened
2 Tbsp. finely chopped basil
1 Tbsp. grated Parmesan cheese
1/4 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. peppper

Combine 1/2 cup softened butter, 2 tablespoons basil, Parmesan cheese, garlic power, salt and pepper in small bowl. Blend with electric mixer until smooth. Put in serving bowl or form individual butter pats.
