Helen Enders' Train Meet Spaghetti for 50

10 lbs very lean ground beef
3 medium onions, chopped
2 stalks celery, chopped
1 lg. green pepper, chopped
3 T. salt
1 t. pepper
2 t. chili powder
46 oz. V-8 juice
46 oz. water
2 1-lb. cans crushed tomatoes
1 small bottle catsup
2 lbs. spaghetti
2 lb. grated cheese
Brown meat, onions, green pepper, celery and seasonings. (Can be frozen at this
point). Set roaster to 350 deg. Add all other ingredients (except cheese) and stir.
Spaghetti should be broken and added a little at a time. Cook for 1 hour. Stir
gently. Add grated cheese just before serving by pushing into spaghetti and letting
melt (i.e., don't stir at this point).
I think it serves more like 35 though since we had two roasters and 65 people and no
leftover spaghetti.
